A delay in obtaining a state-issued liquor license has pushed back the opening date for Rome’s newest steakhouse until Sept. 25.

Sante Fe Cattle Co., located at 707 Turner McCall Blvd., was scheduled to open today.

“We just got (the liquor license) the other day, and we could not confirm an opening date until we got that in hand,” chairman and founder Danny York said Monday.

The Rome restaurant is the sixth location opened this year — and the first in Georgia — by the Brentwood, Tenn.-based steakhouse chain.

The 6,000-square-foot location will employ about 140 people and is the newest of four prototype stores, each of which continues to exceed the company’s annual $3 million sales goal, he said.

“We think Rome could be the biggest store yet, as far as sales,” he said.

“We are real excited about being in Rome. It is our first location in Georgia, but we think it is going to open the door for more stores in Georgia.”

Plans for two more restaurants in Northwest Georgia are already in the works, he said.

The new steakhouse is not the only construction activity under way at the Turner McCall Boulevard address.

Developers Wayne Robinson and Brooke Temple are building an 8,000-square-foot strip center at the location. Construction should wrap up within 45 days, Robinson said Monday.

Firehouse Subs, a nationally based sandwich chain, is among the tenants.

“We do have a lease with them, but we don’t have a target opening date,” he said. “I would guess around the end of October to first of November.”

Tenants for the remaining spaces at the center are still being sought, he said.
